- 2 Zuchinni Medium size sliced into 1/2 rounds.
- 2 Yellow Summer Squash Medium size also sliced into 1/2 rounds.
- 1 Eggplant Small cut into small cubes.
- 8 Ounces Mushrooms Sliced.
- 2 Roma Tomatoes Diced.
- 1 Sweet Onion. Medium size thinly sliced.
- 3 Cloves Garlic Minced.
- 2 Tbl Olive Oil
- 2 Tbl Butter
- 1 Tsp Italian Seasoning
- 1 Tsp Basil
- 1/2 Tsp Oregano
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1/4 Tsp Red Pepper Flakes
- 1 Tsp Sugar
- 1/4 Cup Parmesan Cheese
- 1/4 Cup Mozzarella Cheese
- 2 Tbl Parsley Chopped and fresh.
- 1 Tbl Basil Fresh and chopped.
Method
- Cut all vegetables into similar-sized pieces so they cook evenly.
- In a large 3-quart microwave-safe casserole dish, layer in this order: onions, eggplant, mushrooms, zucchini, summer squash, tomatoes, garlic.
- Drizzle with olive oil and butter.Sprinkle on all seasonings.
- Gently toss everything together until evenly coated.Cover with a microwave-safe lid or vented plastic wrap.
- Cook on High for: 8 minutes.Carefully remove and stir.Return to the microwave for another:4–6 minutes
