Ingredients
  

  • 2 Zuchinni Medium size sliced into 1/2 rounds.
  • 2 Yellow Summer Squash Medium size also sliced into 1/2 rounds.
  • 1 Eggplant Small cut into small cubes.
  • 8 Ounces Mushrooms Sliced.
  • 2 Roma Tomatoes Diced.
  • 1 Sweet Onion. Medium size thinly sliced.
  • 3 Cloves Garlic Minced.
  • 2 Tbl Olive Oil
  • 2 Tbl Butter
  • 1 Tsp Italian Seasoning
  • 1 Tsp Basil
  • 1/2 Tsp Oregano
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/4 Tsp Red Pepper Flakes
  • 1 Tsp Sugar
  • 1/4 Cup Parmesan Cheese
  • 1/4 Cup Mozzarella Cheese
  • 2 Tbl Parsley Chopped and fresh.
  • 1 Tbl Basil Fresh and chopped.

Method
 

  1. Cut all vegetables into similar-sized pieces so they cook evenly.
  2. In a large 3-quart microwave-safe casserole dish, layer in this order: onions, eggplant, mushrooms, zucchini, summer squash, tomatoes, garlic.
  3. Drizzle with olive oil and butter.
    Sprinkle on all seasonings.
  4. Gently toss everything together until evenly coated.
    Cover with a microwave-safe lid or vented plastic wrap.
  5. Cook on High for: 8 minutes.
    Carefully remove and stir.
    Return to the microwave for another:
    4–6 minutes
  6. The vegetables should be tender but still hold their shape.
    If there is excess liquid, let the vegetables stand uncovered for 5 minutes before serving. The liquid will reduce slightly as it cools.
  7. Stir in:
    Taste and adjust salt and pepper.
    Parmesan cheese, parsley, fresh basil, and mozzarella cheese.

Notes

For a restaurant-style “Villa” flavor, stir in:
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
