Method
- Cut all vegetables into similar-sized pieces so they cook evenly.
- In a large 3-quart microwave-safe casserole dish, layer in this order: onions, eggplant, mushrooms, zucchini, summer squash, tomatoes, garlic.
- Drizzle with olive oil and butter.Sprinkle on all seasonings.
- Gently toss everything together until evenly coated.Cover with a microwave-safe lid or vented plastic wrap.
- Cook on High for: 8 minutes.Carefully remove and stir.Return to the microwave for another:4–6 minutes
- The vegetables should be tender but still hold their shape.If there is excess liquid, let the vegetables stand uncovered for 5 minutes before serving. The liquid will reduce slightly as it cools.
- Stir in:Taste and adjust salt and pepper.Parmesan cheese, parsley, fresh basil, and mozzarella cheese.
Notes
For a restaurant-style "Villa" flavor, stir in:
- 1 tablespoon balsamic vinegar
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
