Maple Orange Sweet Potatoes

Maple orange sweet potatoes roasted with Brown Butter and Crispy Pecans, the first thing anyone notices is the smell of butter browning. Then comes the sage, which crackles as it hits the skillet. By the time I grate the orange, someone has wandered into the kitchen and asked whether the sweet potatoes are ready. I point to the oven. We have a few minutes yet.
Maple-Orange Sweet Potatoes History
We’ve had considerably longer to get acquainted with the sweet potato. Indigenous farmers in the tropical Americas cultivated it thousands of years before it found a place at the American Thanksgiving table. It probably wasn’t served at the 1621 Plymouth gathering, though it’s hard to imagine the holiday without it today. By 1896, a Texas agricultural publication included a recipe for glazed sweet potatoes. In 1917, a marshmallow company commissioned a recipe booklet that paired the two, helping popularize the topping that still divides Thanksgiving tables.
My version of Maple orange sweet potatoes, borrows from that older glazed tradition. I roast the sweet potatoes until their edges turn dark and sticky, then toss them with brown butter, maple syrup, and orange zest. A teaspoon of cider vinegar gives the glaze just enough tartness to make me want another bite. The pecans go on at the last minute, along with the fried sage, so they still crunch when the platter reaches the table.
I set it beside the turkey and go back for a serving spoon. When I return, the person who wandered into the kitchen has already helped herself to a piece with her fingers. She tells me she was checking whether they needed salt. A minute later, she’s passing the platter and telling everyone to get a little of the topping. By the time it comes back around, there’s one piece left. I take it and drag it through the streak of maple and brown butter at the bottom of the platter.

Ingredients
Method
- Roast the sweet potatoes. Heat the oven to 425°F. Toss the sweet potatoes with the olive oil, fine sea salt, and pepper. Spread them in a single layer across two rimmed baking sheets. Roast for 30 to 40 minutes, flipping the pieces and swapping the pans halfway through, until the potatoes are fork-tender and browned at the edges.
- Toast the pecans and sage. Melt the butter in a light-colored skillet over medium heat. Add the pecans and stir for 2 to 3 minutes, until fragrant and the butter starts to smell nutty. Add the sage and cook for about 30 seconds, until crisp and the butter solids are golden brown. Take the skillet off the heat and use a slotted spoon to transfer the pecans and sage to a plate.
- Make the glaze. Let the skillet cool for a minute, then stir the maple syrup, orange zest, orange juice, and vinegar into the brown butter.
- Finish and serve. Gently toss the hot sweet potatoes with the glaze and spoon them onto a warm platter. Scatter the pecans and sage over the top and finish with a pinch of flaky sea salt.
