CLASSIC BLACKBERRY COBBLER
Ingredients
- BLACKBERRY FILLING
- 6 Cups Fresh Blackberries
- 1 Cup Sugar
- 1 Tbl Lemon Juice
- 1 Tsp Vanilla Extract
- 2 Tbl Cornstarch
- COBBLER TOPPING
- 1 Cup All Purpose Flour
- 1 Cup Sugar
- 2 Tsp Baking Powder
- 1/4 Tsp Salt
- 1 Cup Milk
- 1/2 Cup Butter Unsalted and melted.
- ADDITIONAL INGREDIENTS
- Cinnamon Sugar To sprinkle over top after baking.
Method
- Preheat oven to 375°F.
- In a large bowl, gently combine blackberries, sugar, lemon juice, vanilla, and cornstarch.Let sit for about 10 minutes while preparing the batter.
- In another bowl, whisk together flour, sugar, baking powder, and salt.
- Stir in the milk until smooth.
- Pour the melted butter into the baking dish.
- Without stirring the butter, pour the batter evenly over it.Spoon the blackberry mixture evenly over the batter. Do not stir — the cobbler will form its own crust as it bakes.
- Bake for 45–55 minutes, or until the top is golden brown, and the berry filling is bubbling around the edges
- Sprinkle lightly with cinnamon sugar during the last 10 minutes of baking.
- Let cool for about 10 minutes before serving.
