CLASSIC BLACKBERRY COBBLER

Blackberry cobbler is one of the great comfort desserts of the American South — rustic, simple, and deeply rooted in generations of home cooking. Long before elaborate pastries and layered cakes became common in rural kitchens, cobblers were created out of necessity. Early settlers in America often lacked the ingredients, tools, or time required to make traditional European pies, so they adapted by baking sweetened fruit beneath or beneath-and-over a simple biscuit or batter topping. The result was a humble dessert that was hearty, forgiving, and perfect for feeding families gathered around the table.

Ingredients
  

  • BLACKBERRY FILLING
  • 6 Cups Fresh Blackberries
  • 1 Cup Sugar
  • 1 Tbl Lemon Juice
  • 1 Tsp Vanilla Extract
  • 2 Tbl Cornstarch
  • COBBLER TOPPING
  • 1 Cup All Purpose Flour
  • 1 Cup Sugar
  • 2 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1 Cup Milk
  • 1/2 Cup Butter Unsalted and melted.
  • ADDITIONAL INGREDIENTS
  • Cinnamon Sugar To sprinkle over top after baking.

Method
 

  1. Preheat oven to 375°F.
  2. In a large bowl, gently combine blackberries, sugar, lemon juice, vanilla, and cornstarch.
    Let sit for about 10 minutes while preparing the batter.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt.
  4. Stir in the milk until smooth.
  5. Pour the melted butter into the baking dish.
  6. Without stirring the butter, pour the batter evenly over it.
    Spoon the blackberry mixture evenly over the batter. Do not stir — the cobbler will form its own crust as it bakes.
  7. Bake for 45–55 minutes, or until the top is golden brown, and the berry filling is bubbling around the edges
  8. Sprinkle lightly with cinnamon sugar during the last 10 minutes of baking.
  9. Let cool for about 10 minutes before serving.

Notes

Best enjoyed warm with:
  • vanilla bean ice cream
  • fresh whipped cream
  • or a drizzle of heavy cream
