SHRIMP WITH NOODLES

Shrimp With Noodles
Ingredients
- 1 Lb Jumbo Shrimp Uncooked.
- 1 Tbs Peanut Oil You can also use vegetable oil.
- 3 Shallots Finely chopped.
- 2 Cloves Garlic Finely chopped.
- 1 Inch Gingerroot Thin sliced.
- 2 ups Coconut Milk
- 1 Tbl Green Curry Paste
- 4 Thai Basil Leaves Fresh
- 1 Tsp Brown Sugar Light
- 8 Ounces Flat Rice Noodles Egg noodles can be used if the rice noodles are not available.
- 2 Tsp Sesame Oil
- 2 Tbl Sesame Seeds Toasted.
- 4 Sprigs Thai Basil Fresh for garnish.
Method
- Remove the head and shell of the shrimp. Cut a slit along the back and remove and discard the dark vein. Watch thoroughly.
- Heat the peanut oil in the wok. Add the shallots, gingerroot, garlic and stir fry for 3 minutes. Add the coconut milk and curry paste and let simmer for 3 minutes.
- Add the shrimp, basil, and sugar and stir fry until the shrimp turns pink.
- Cook the noodles in boiling water then drain. Stir in the sesame oil and seeds.
- Plate the noodles and add the shrimp over the noodles and garnish with the basil sprigs. Enjoy.
