Shrimp With Noodles

Shrimp with noodles, or Guay Tiaw Kung, is a popular Thai dish generally featuring a delightful combination of shrimp and noodles with coconut milk.

Ingredients
  

  • 1 Lb Jumbo Shrimp Uncooked.
  • 1 Tbs Peanut Oil You can also use vegetable oil.
  • 3 Shallots Finely chopped.
  • 2 Cloves Garlic Finely chopped.
  • 1 Inch Gingerroot Thin sliced.
  • 2 ups Coconut Milk
  • 1 Tbl Green Curry Paste
  • 4 Thai Basil Leaves Fresh
  • 1 Tsp Brown Sugar Light
  • 8 Ounces Flat Rice Noodles Egg noodles can be used if the rice noodles are not available.
  • 2 Tsp Sesame Oil
  • 2 Tbl Sesame Seeds Toasted.
  • 4 Sprigs Thai Basil Fresh for garnish.

  • 1 Wok For stir frying

Method
 

  1. Remove the head and shell of the shrimp. Cut a slit along the back and remove and discard the dark vein. Watch thoroughly.
  2. Heat the peanut oil in the wok. Add the shallots, gingerroot, garlic and stir fry for 3 minutes. Add the coconut milk and curry paste and let simmer for 3 minutes.
  3. Add the shrimp, basil, and sugar and stir fry until the shrimp turns pink.
  4. Cook the noodles in boiling water then drain. Stir in the sesame oil and seeds.
  5. Plate the noodles and add the shrimp over the noodles and garnish with the basil sprigs. Enjoy.

Notes

Chopped chili peppers can also be mixed in for those who prefer a spicy kick.
