Especially in areas like Memphis, where “dry ribs” are a local favorite. These spice blends were influenced by Native American smoking techniques, African American seasoning traditions, and the preservation methods of early settlers. Over time they evolved into the complex profiles we enjoy today.

Ingredients
  

  • 2 Tsp Cumin
  • 1/4 Cup Season Salt
  • 1/4 Cup Black Pepper
  • 2 Tsp Dry Mustard
  • 1/2 Cup Brown Sugar Either light or dark, whatever your preference.
  • 1 1/2 Tbl Garlic Powder
  • 1 Tbl Onion Powder
  • 3 Tbl Paprika
  • 1 Tsp Ginger
  • 3 TBL Cayenne Powder
  • 2 Tbl Oregano
  • 2 Tbl Chili Powder
  • 1 Tbl Red Pepper Flakes

Method
 

  1. Combine all ingredients in a bowl and mix thoroughly until well blended.
  2. Break up any clumps (especially from the brown sugar) using your fingers or a fork.
  3. Store in an airtight container or spice jar.
  4. Rub generously on ribs (both sides) at least 1 hour before cooking, preferably overnight for best flavor.

Notes

You can adjust all the ingredients per your preference. I prefer my ribs with some heat, which is why I have the amount of cayenne pepper, red pepper flakes, and chili powder that I do.
Ideal for smoking, grilling, or baking.
For extra crust, let ribs sit uncovered in the fridge after applying the rub before cooking.
