  • 2 Tsp Lime Juice
  • 1 10 Ounce Can Ro-Tel with Green Chiles
  • 2 Tsp Liquid Smoke
  • 1 Tbl Apple Cider Vinegar
  • 1 Tbl Orange Juice
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 2 Tsp Black Pepper
  • 2 Tsp Salt
  • 1/2 Green Bell Pepper Rough Chopped-Seeds Removed
  • 1/2 Red Bell Pepper Rough Chopped-Seeds Removed
  • 1/2 Orange Bell Pepper Rough Chopped-Seeds Removed
  • 2 Habanero Peppers Rough Chopped with Seeds
  • 3 Jalapeno Peppers Rough Chopped with Seeds
  • 1 Macho Pepper Rough Chopped with Seeds
  • 1 Onion Large, rough chopped.
  • 3 Cloves Garlic
  • 1/4 Cup Cilantro

Equipment

  • Food Processor

Method

  1. Mix the tomatoes, lime juice, orange juice, Ro-Tel, liquid smoke, apple cider vinegar, salt, pepper, onion powder, and garlic powder in a large mixing bowl and mix together.
  2. Place the next nine ingredients in a food processor and pulse until blended, You don't want them pureed. They should retain some chunkiness so as not to be watery. However, you don't want them to be too chunky.
  3. Mix the last nine ingredients after the food processing with the initial ten ingredients in the mixing bowl. Mix together thoroughly until well combined.
  4. Cover the mixing bowl with plastic wrap and refrigerate for 2 days to allow the flavors to meld together. Enjoy.

Notes

Makes about 2 quarts. Scale recipe s needed. You can serve with tortilla chips or use in many other ways.
To make it hotter, add more macho peppers or habanero peppers. I do not recommend using ghost peppers or anything hotter.
To make it milder, you can remove the seeds from the jalapeno, macho, habanero peppers. Yo can also eliminate the habanero and macho peppers from the recipe.
