Mirepoix

Mirepoix (pronounced meer-PWAH) is a fundamental flavor base used in French cuisine, made from a mixture of diced onions, carrots, and celery, typically in a ratio of 2:1:1. The vegetables are gently sweated in fat (often butter or oil) over low heat until soft and aromatic, but not browned.

Ingredients
  

  • 1/3 Cup Carots Diced.
  • 2/3 Cups Onions Diced.
  • 1/3 Cup Celery Diced.
  • 3 Tbl Butter

Method
 

  1. Melt butter in frying pan over medium low heat. medium-low
  2. Add carrots and sauté for about 4 minutes until softened.
  3. Add onion and sauté for about 4 minutes until softened.
  4. Add celery and continue cooking, stirring often, until all the vegetables are tender and just beginning to turn golden around the edges. Remove.
  5. Do not brown.

Notes

  • It’s important to dice the vegetables evenly to ensure even cooking. 
  •  Add the diced carrot to the pan first and cook until slightly softened before adding the onion. Cook until the onion begins to soften before adding the celery. 
  • The preparation of mirepoix is to slowly extract the sweetness from the vegetables. Browning can impart bitterness and spoil the flavor.
