Ingredients

  • 1/2 Lb Vermicelli Noodles
  • 2 Tbl Vegetable Oil
  • Sauce
  • 1 Tbl Ginger Freshly grated.
  • 1 Tbl Lemon Juice
  • 2 Tbl Sriracha
  • 1 Tbl Honey
  • 1 Tbl Brown Sugar
  • 1 Serrano Chili Sliced into thin rings
  • Calamari
  • 1 Lb Calamari
  • 1 Cup Vegetable Oil
  • 3 Egg Yolks Beaten
  • 2 Tbl Potato Starch All Purpose Flour will also work.
  • 1 Tsp Chinese Five Spice Powder
  • 1 Tsp Salt
  • 1 Tsp White Pepper
  • 1 Tbl White Sesame Seeds
  • 1/4 Cup Coriander Chopped. Optional.

Method

  1. To make the noodles, in a large bowl, cover the noodles with boiling water. Set aside for about 4 minutes. Drain the noodles and rinse under cold running water. Drain again and transfer to a bowl. Add the oil and toss to coat well. Set aside.
  2. To make the dressing, in a bowl, beat all of the dressing ingredients except for the chili until well combined. Stir in the chili. Set aside.
  3. To make the calamari, in a small bowl, mix together the five-spice powder, salt, and white pepper. Set aside. In another bowl, beat the egg yolks and potato starch until well combined.
Dip the calamari rings into the egg mixture and then fry them over high heat for about 2 minutes, stirring frequently. With a slotted spoon, place the calamari rings on a paper-towel-lined plate to drain.
  4. Sprinkle the hot calamari rings with the spice mixture. Divide the noodles into 4 shallow bowls and drizzle with ⅔ of the dressing, reserving 1/3 of it. Top each bowl with calamari and then drizzle with the remaining dressing.
  5. Sprinkle sesame seeds over top along with the coriander, if using. Serve and enjoy.

Notes

It’s light but satisfying, a little fancy without being fussy, and you can easily throw in extra veggies like snap peas or bok choy if you want. Serve it with a crisp white wine or a refreshing cocktail, and you’ve got a meal that feels special without a lot of fuss.
