Ingredients
  

  • 3 Cups Crab Meat Canned lump crab works well.
  • 1 Stick Butter
  • 1 1/2 Cups Onions Chopped.
  • 1/4 Cup Green Bell Pepper Chopped.
  • 1/4 Cup Red Bell Pepper Chopped.
  • 1 Tsp Garlic Minced.
  • 1 Stalk Celery Chopped.
  • 1 10 Ounce Can Tomatoes With Chilies Such as Ro-Tel.
  • 1/4 Cup Pimentos Chopped.
  • 4 Ounces Cream Cheese
  • 4 Ounces Mushrooms Sliced.
  • 1 Cup Cheddar Cheese Shredded.
  • 1 10 Ounce Can Mushroom Soup
  • 1 1/2 Cups Bread Crumbs
  • 3 Cups Rice Cooked.
  • 1 Tsp Worcestershire Sauce
  • 1 Tsp Hot Sauce
  • 1/4 Cup Green Onions Tops Only, chopped.
  • 1 Tsp Paprika
  • 1 Tsp Cayenne Pepper
  • 1 Tsp Salt
  • 1 Tsp Thyme

Method
 

  1. Sauté onion, green pepper, red pepper, garlic, mushrooms, and celery in 1/2 of the melted butter in a saucepan.
  2. Cook the rice per directions.
  3. Add tomatoes and pimientos.
  4. Add 1/2 of the bread, soup, Worcestershire sauce, hot pepper sauce, and crabmeat, and spices. Blend well.
  5. Add the cream cheese and blend together thoroughly.
  6. Add the rice and onion tops.
  7. Spoon into a 2 1/2-quart casserole.
  8. Top with the remaining breadcrumbs and remaining melted butter.
  9. Cover everything with the cheddar cheese.
  10. Bake in a preheated oven at 400F for 25-30 minutes. Serve and enjoy.
