Air Fryer Sausage & Egg Breakfast

Picture a plate loaded with golden-brown hash browns, their crisp edges crackling slightly as the fork presses in, revealing a fluffy potato interior. Next to them, perfectly cooked breakfast sausage—juicy and savory with hints of sage, black pepper, and perhaps a touch of maple—offers a satisfying bite.

Ingredients

  • 4 Links Breakfast Sausage
  • 2 Cups Hash Browns Frozen and shredded.
  • 1/2 Cup Red Bell Peppers Diced.
  • 1/2 Cup Green Bell Peppers Diced.
  • 1/4 Cup Onion Sweet and diced.
  • 2 Eggs Large.
  • 1/2 Cup Cheddar Cheese Shredded.
  • Salt & Pepper Shakers To taste.
  • Cooking Spray Such as olive oil or PAM.
  • Fresh Chives Optional garnish.
  • Hot Sauce Optional garnish.

Equipment

  • 1 Air Fryer

Method

  1. Set the air fryer to 375°F for 3 minutes.
  2. Lightly spray the air fryer basket with oil. Spread the hash browns evenly on one side of the basket.
  3. Scatter diced red and green bell peppers over the potatoes.
  4. Place sausage links on the other side.
  5. Lightly spray everything with oil and season potatoes/peppers with salt & pepper.
  6. Cook for 8 minutes, flipping hash browns and stirring peppers halfway through. Turn sausages at the same time.
  7. Lightly grease two small, heat-safe ramekins. Crack an egg into each, season with salt & pepper.
  8. After the first 8 minutes of cooking, carefully add the ramekins to the air fryer basket (nestle beside or on top of the sausages).
  9. In the last 2-3 minutes, sprinkle shredded cheese over the hash browns and peppers. Continue cooking until the cheese is melted and bubbly.
  10. Cook until hash browns are golden, peppers are tender, and cheese is melted.
Sausages are browned and cooked through (160°F/71°C for pork).
Eggs are done to your liking.
  11. Transfer cheesy hash browns with peppers, sausages, and eggs to plates.
Garnish with chopped chives or a drizzle of hot sauce if desired.

Notes

💡 Tip: For a flavor upgrade, use a blend of cheddar and Monterey Jack, or try pepper jack for a little kick.
