Method
- Set the air fryer to 375°F for 3 minutes.
- Lightly spray the air fryer basket with oil. Spread the hash browns evenly on one side of the basket.
- Scatter diced red and green bell peppers over the potatoes.
- Place sausage links on the other side.
- Lightly spray everything with oil and season potatoes/peppers with salt & pepper.
- Cook for 8 minutes, flipping hash browns and stirring peppers halfway through. Turn sausages at the same time.
- Lightly grease two small, heat-safe ramekins. Crack an egg into each, season with salt & pepper.
- After the first 8 minutes of cooking, carefully add the ramekins to the air fryer basket (nestle beside or on top of the sausages).
- In the last 2-3 minutes, sprinkle shredded cheese over the hash browns and peppers. Continue cooking until the cheese is melted and bubbly.
- Cook until hash browns are golden, peppers are tender, and cheese is melted.Sausages are browned and cooked through (160°F/71°C for pork).Eggs are done to your liking.
- Transfer cheesy hash browns with peppers, sausages, and eggs to plates.Garnish with chopped chives or a drizzle of hot sauce if desired.

💡 Tip: For a flavor upgrade, use a blend of cheddar and Monterey Jack, or try pepper jack for a little kick.
