Ma Joan’s Cheesecake

- 1 Springform Pan
Ingredients
- CRUST
- 15 Graham Crackers Whole Cracker not separated
- 1/2 Cup Butter Melted
- 2 Tbl Sugar
- FILLING
- 2 8 Ounce Packages Cream Cheese
- 1/2 Cup Sugar
- 2 Eggs
- 1 Tsp Vanilla Extract
- TOPPING
- 1 Cup Sour Cream
- 2 Tbl Sugar
- 1 Tsp Vanilla Extract
Instructions
- Crush graham crackers very fine in a plastic bag.
- Add melted butter and sugar to the graham crackers and mix together.
- When fully combined, press mixture into the bottom of the springform pan and set aside.
- For the filling, mix together cream cheese and sugar. Add eggs one at a time with vanilla extract. Cream them together well.
- Add on top of the graham cracker mixture in the springform pan and bake in preheated oven for 20 minutes at 375F. Remove and let cool for 20 minutes. Don't let it fully cool as topping may not adhere to it. After you remove ot from the oven, increase the temperature to 425F.
- Mix sour cream, sugar and vanilla extract together until fully combined for the topping. After filling cools for 20 minutes, add topping.
- Spread topping over the filling evenly and put into a preheated 425F. oven for 10 minutes. Remove and refrigerate overnight.
