Ingredients
  

  • 2 Lbs. Red Potatoes Small or medium. Yukon Gold work well also.
  • 1/2 Cup Red Onions Chopped
  • 1/2 Cup Green Onions Sliced
  • 1 Green Bell Pepper Chopped
  • 1 Stalk Celery Sliced
  • 1/2 Lb Kielbasa Sliced
  • 2 Eggs Hard Boiled and sliced.
  • 1/4 Cup Parsley Fresh and minced.
  • 5 Tbl Apple Cidar Vinegar
  • 6 Tbl Mayonnaise
  • 2 Tbl Dijon Mustard
  • 2 Tsp Garlic Crushed
  • 1/2 Tsp Pepper
  • 1 Tsp Cayenne Pepper
  • 1 Tsp Paprike Hot and Smokey
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder

Method
 

  1. Cook the potatoes in boiling salted water for 20-30 minutes or until tender drain.
  2. Rinse with cold water cool completely. Cut into 1/4-in. slices place in a large bowl.
  3. Add onions, parsley and 3 tablespoons vinegar toss.
  4. In a medium skillet, cook sausage in oil for 5-10 minutes or until it begins to brown. Remove with slotted spoon and add to potato mixture.
  5. To drippings in skillet, add mustard, garlic, pepper, cayenne pepper, onion powder, garlic powder, paprika, and remaining vinegar bring to a boil, whisking constantly.
  6. Pour over salad toss gently.
  7. Add mayonnaise, celery and green bell pepper, and again toss gently.
  8. Top with sliced eggs and sprinkle with the green onion.
  9. Chill in refrigerator for 1 hour and serve chilled.

Notes

You can add relish or chopped dill pickles. Other types of Cajun sausages like andouille can also be used sa well as bacon chopped up. 
 
Also blends of Cajun spices can be added or even used instead of the individual spices.
