Korean style short ribs, or Galbi (or galbi) are a beloved dish known for its rich, savory, and slightly sweet flavors. Traditionally, the ribs are marinated in a combination of soy sauce, garlic, sesame oil, sugar, and other seasonings. Consequently, this tenderizes the meat and infuses it with a deep umami taste. Afterwards, the marinated ribs are then grilled or broiled, resulting in a perfect balance of smoky, caramelized exterior and tender, juicy interior. However, this time, we are trying to make them in an instant pot.

Often served with steamed rice, kimchi, and a variety of banchan (side dishes). Korean style short ribs, as such, is a popular choice for Korean barbecues and family gatherings. The meat is typically cut across the bone, allowing for bite-sized pieces that are easy to eat. The combination of sweet and savory flavors, along with the slightly charred exterior, makes galbi a true Korean comfort food. It is both indulgent and satisfying. It will be interesting to see how they turn out in an instant pot.

Ingredients
  

  • 3 Lbs. Beef Short Ribs
  • 1 Asian Pear (If unavailable, you can use an apple) peeled, cored, and coarsely chopped
  • 1 Onion Small and chopped
  • 4 Cloves Garlic chopped or minced
  • 3/4 Tbl. Ginger Fresh and chopped
  • 1 Cup Soy Sauce
  • 1/4 Cup Rice Wine or Mirin
  • 1/4 Cup Water
  • 1/4 Cup Brown Sugar Light or dark
  • 2 Tbl Sesame Oil Regular not toasted
  • 1 Tsp Pepper
  • 2 Carrots Medium, peeled and cut into bite size chunks
  • 6 Radishes Peeled and cut into pieces. Daikon radish will work also. Only use 3 of them though.
  • 1/3 Cup Sugar
  • 1 Bunch Green Onions Chopped
  • 1 Tbl Sesame Seeds White sesame seeds
  • 8 Onces Mushrooms sliced-Optional

  • 1 Instant Pot

Method
 

  1. cover ribs in a bowl with water and soak for at least one hour.

  2. While ribs are soaking, combine Asian pear or apple, onion, garlic, and ginger in a blender or food processor, and puree until smooth.

  3. Transfer mixture to a mixing bowl. Add 3/4 cup of the soy sauce, rice wine, water, brown sugar, 1 sesame oil, and pepper. Stir together to create the sauce.
  4. Drain ribs and dry them. Place ribs in an instant pot and add carrots, mushrooms if using them, and radishes. Pour Asian pear/apple sauce on top. Close and lock the lid. Select pressure function on high and set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.

  5. When done, release pressure using the natural-release method. This could take 30 minutes. Unlock and remove the lid. Transfer meat and vegetables to a plate and set aside.
  6. Select the Sauté function on your Instant Pot. Stir in remaining soy sauce, remaining sesame oil, and white sugar. Cook, stirring occasionally, until sugar has melted, and sauce has thickened, about 12-15 minutes. Return ribs and vegetables to the pot to get nice and saucy. Mix sauce over ribs until nicely coated. Then remove to a platter, the ribs and vegetables.
  7. Garnish ribs and vegetables with green onions and sesame seeds.
